With a strong focus on olive and canola oil, this theme is designed to provide a platform for global and local researchers in the fields of specific oils to share their latest research with their peers. This theme builds on the Olive Oil Masterclass being held on the preceding Sunday, expanding on key steps such as processing, storage and quality. This theme also acknowledges growing role of canola oil in food and industrial applications, and the leading edge research that underpins this oil. Researchers in other specialty oils such as CBD, carinta, pongamia, novel marine oils, fruit and nut oils, and more also have the opportunity to present their latest research and highlight the opportunities that these oils can deliver.

Processing and Industrial Applications

The ever-evolving area of oils and fats processing will be fully explored in this session. With community expectations around food processing continually moving the industry forward, sessions under this theme will outline how new techniques, and new approaches to old techniques, can improve processing efficiencies, and keep abreast with market needs and wants. This theme will also cover latest developments in Industrial Applications of oils and fats, in the fields ranging from biodiesel and aviation fuel to soaps and detergents.

Trace Contaminants and Analytical Solutions: OR Analytical and contaminates to Contaminates and Mitigation

This theme recognises the growing challenges placed on oils and fats processors and suppliers in meeting regulatory and community requirements in relation to oil quality and safety. Subjects to be explored under this theme include 2 and 3 MCPD, GE, heavy metals, Phthalates, trans fats, agricultural and processing chemical residues- exploring the causes, the mitigating factors, and the analytical techniques supporting effective management.

Analytical Methods and Standards

The old adage of ‘You can’t manage what you can’t measure’ is never more true than in oils and fats. Sessions under this theme will focus on the latest developments and technology analytical chemistry, and their application to oils and fats. Topics such as product adulteration, lipidomic analysis, NMR, NIR and resolvins/protectins will be covered in great detail under this theme.

Biotechnology

With growing needs for fuel and food, this theme will provide practical examples on the role that biotechnology is likely to play in oils and fats in the future. New breeding technologies such as CRISPR CAS9 and ZFN open a new world of possibilities across the all aspects of the industry, while traditional GM technology still remains at the forefront of innovation for the industry.

Nutrition and Lipidomics

Highly informative sessions with a focus on the fast growing area of lipidomics and how this might shape the future of human health and wellbeing. The sessions will also cover the latest research on the beneficial role of oils and fats on mental and gut microbia; latest findings on omega 3 research; and providing an opportunity for researchers in fields of emerging lipids to share their latest work.

Food Applications

Food glorious food! We know that oils and fats deliver one of the primary organoleptic experiences associated with eating, providing texture, flavour and function. This theme will explore the latest developments in the application of oils and fats in food formulation, oxidation and processing. These sessions will provide a deeper understanding of the role of oils and fats in foods as diverse as chocolate, beverages, packaged foods and snacks. This theme will also build on the Deep Frying Symposium held on the preceding weekend, exploring deeper technical and scientific aspects.

Plant Protein and Animal Nutrition

Plant protein has rapidly gained a place on the ‘Top 10’ trend list, as consumers actively seek out plant based protein for their own health and that of the planet. Ironically, plant protein has long been a staple of intensively farmed livestock and aquaculture. Researchers presenting papers under this theme will explore the processing, handling, structure and nutrition associated with plant proteins, and their respective applicability for both human food and animal feed.

Palm Oil

This core theme of the Conference will provide a platform for researchers in palm oil and related products to present the latest science in areas as diverse a nutrition, processing, sustainability and new technologies.
